強い苦みが特徴のIPAと呼ばれるビールが流行するもっと前、2008年にグーデン・カロルス・ホップシンヨールは造られました。醸造所の思いと今流行りのスタイルとはかけ離れたものでしたが、現在のIPAの製造方法と全く同じように、チャレンジャー、ゴールディング、オーロラ、トラディション、スパルトといった、5種類ものホップが、ビールを仕込むさまざまな段階で使用されました。
ビールの名前「ホップシンヨール」はオランダ語以外では何のことかわかりにくいですが、醸造所があるメッヘレン市の民話に由来しています。その民話で「opsinjoor」は木製の人形で、うだつが上がらない夫の象徴です。「op」は「up」を、「sinjoor」は「mister」を意味します（スペイン語の「senor」のように）。このビールはホップをふんだんに使うので、ホップシンヨールと命名されました。「ホップシンヨール」は「ミスターホップ」という意味に解釈することができます。

この「ミスターホップ」はベルギーのIPAです。苦味はしっかりありますがそれだけではありません。少し控えめのフローラルや麦芽の香りも感じることが出来ます。味わいは、チャレンジャー・ホップ由来の、はっきりしたスパイスの風味で始まり、後から小麦麦芽を使うことで生まれるバナナのようなフルーティーさがゆっくりと味わいのバランスを取ります。苦味が強くしっかりとしたエールですが、後味はなめらかで優しい苦さのビールです。アルコール分8％にもかかわらず、グーデン・カロルス・ホップシンヨールはミディアムボディでとても爽やかなビールです。

Gouden Carolus Hopsinjoor was created in 2008, well before the rise in popularity of IPAs—beers characterized by their intense bitterness. Although the brewery’s original vision differed significantly from the styles trending today, the beer was crafted using the exact same production methods employed for modern IPAs: five different hop varieties—Challenger, Golding, Aurora, Tradition, and Spalt—were incorporated at various stages of the brewing process.

The beer’s name, “Opsinjoor,” may be obscure to those who do not speak Dutch, but it originates from a folktale in the city of Mechelen, where the brewery is located. In the story, “Opsinjoor” is a wooden doll that symbolizes a henpecked or downtrodden husband; “op” means “up,” and “sinjoor” means “mister” (akin to the Spanish “señor”). The beer was named “Opsinjoor” because it is brewed with an abundance of hops, and the name can be interpreted as “Mr. Hop.”

“Mr. Hop” is a Belgian IPA. While it possesses a robust bitterness, there is more to it than that; one can also detect subtle floral and malty aromas. The flavor profile opens with distinct spicy notes derived from Challenger hops, which are then gradually balanced by a fruity, banana-like character resulting from the use of wheat malt. Although it is a robust ale with a strong bitter kick, the finish is smooth, leaving a gentle bitterness on the palate. Despite its 8% alcohol content, Gouden Carolus Hopsinjoor is a medium-bodied and remarkably refreshing beer.
